In the land of Royal India, chicken fish and vegetables are all the much loved dishes; they are eaten quite regularly. At the Moghul time specially hunted wild game birds or caught game birds offered an excellent change from normal poultry and a healthier eating habit for nawabs.

Tandoori Ostrich

Diced Ostrich meat seasoned in olive oil and fresh herbs and then marinated in home made yoghurt with ground spice. Grilled in the tandoor.

 

Ostrich Masala

Cubes of Ostrich meat marinated in home made yoghurt, red ine, fresh herbs ginger and garlic. Baked in the Tandoor then cooked in a fairly spiced sauce.
